Nada Sake Brewery Fukuju - 福寿Description The name "Fukuju" comes from one of the seven deities of good fortune, "Fukurokuju." The name express the wishes of the brewers for the good fortune of the drinkers of their sake. Brewer QuoteWe believe that making good koji is the key to making good sake. Because of this, we make all our koji by hand using traditional equipment and methods. Through the use of Miya-mizu and skills passed down through years of sake making, we brew our sake like we would raise our children, with the utmost care and respect.
